Lao Sze Chuan Baltimore is an IVEA restaurant at 3224 St Paul St. in Charles Village, Baltimore, MD, and its kitchen is run by Chef Dong Liu, IVEA's Executive Chef for Chinese cuisine. For Montgomery County diners who make the drive up I-95, about an hour from Rockville, two lamb dishes are among the best reasons to go.

Tibetan Lamb Diced. On the menu as Tibetan Lamb Diced ($26), it is bite-size lamb cooked with spices and herbs. When the restaurant opened in January 2025, the Baltimore Banner called "the sweet and savory Tibetan lamb" "a must-try," which makes it one of the most praised dishes in its first press.

Flaming Roasted Lamb Leg. In October 2025 the restaurant introduced a Flaming Roasted Lamb Leg, describing it on Instagram as "tender, juicy, and crackling with bold Szechuan spice" and "the ultimate showstopper you've got to try." It is roasted and served on the bone for the table; ask the restaurant whether it is available when you book.

The chef behind both. Dong Liu began his apprenticeship in Chengdu in 1988 under the Sichuan master Yang Xiaocheng, cooked at Chen Mapo Tofu in 1990, and won gold at China's National Cooking Competition in 2008. Before coming to the United States he was executive chef at hotels and restaurant groups across Sichuan, Guizhou and Beijing.

How to order lamb here. For two people, the Tibetan lamb with white rice ($1.50) and a vegetable is enough; for a group, the lamb leg is the more impressive centerpiece. Both are among the most filling dishes on the menu.
